Happy Thanksgiving

Today is a day which for many revolves around food and cooking - family, friends and just overall goodness- All I have to say about it is -  Enjoy the day, Be Happy and don't get caught up in worry about what to eat and what not to eat.  You are the master of your mouth and you have the freedom to choose what you put in it.  Just take it easy and enjoy! Start the day off with a healthy Juice (like The Big Green or perhaps a Super A,B,C) and have a great Thanksgiving!

Crock pot Broccoli Casserole
 When it comes time to EAT - A ole time favorite of mine is a Crock Pot Broccoli Casserole - this is really a delicious side dish - but if you've ever cooked Broccoli, it definitely has a distinct scent to it while it's cooking.  So I typically put it in the Crock Pot around six in the morning (which I just finished doing), then put the Crock Pot in the mud room (or a room that doesn't get much traffic - The scent of it cooking just doesn't seem to go well with the other scents coming from the kitchen- but it Tastes great) and when it's time to eat I transfer the casserole to a serving dish and it's usually a hit. Fresh Broccoli, Green Onion, Sharp Cheese (if you want to use a cheese substitute that's up to you - this is ONE dish I use REAL cheese), and crushed crackers (Ryevita whole grain or whatever you like, just read the label), Cream of Celery Soup (or you can buy a soup just read the label).  This is so simple and so yummy! 5-7 hours low in the crock pot or 2-3 on high.
Fresh Cranberry Relish

When I was a kid (growing up on the west coast) I remember Thanksgiving with Cranberry Sauce - But the only thing is that the Cranberry Sauce was out of a Can and it looked like Jello!  I NEVER ate it - it tasted like a can and I grew up NOT liking Cranberries.  Until I moved to New England!  My first Thanksgiving in Maine one of my friends brought over Fresh Cranberry Relish- So Simple it's stupid.  Put a couple cups of Fresh Cranberries in a saucepan and add water (almost covering the cranberries).  Add some sweetener (if you read the label on bagged Cranberries it calls for a cup of SUGAR), you can use alternatives to white sugar like Maple Syrup (which is what I use and only half a cup).  Bring the water to a boil and cook until the Cranberries POP! - Chill and Serve!

Now for desert - Most likely it will be a piece of Apple Pie or Pumpkin Pie - It is Thanksgiving after all.  But, if you're looking for a sweet treat and want to make a smoothie - How about a Savannah's Sunshine - 1 Banana, 1 c. Pineapple, 1 Orange, 1 c Almond Milk (ice) -  So Delicious! and it will satisfy any sweet tooth.
